why?
because they realized that they screwed up, that is, that they did not prepare the store well.
and if they realized that it was a mistake, they had to cancel all such accounts on the same or at most the next day and return the money to everyone's accounts automatically. so people would repeat the correct purchase on their site or go to buy from a competitor.
some of them have already bought from the competition in parallel, so if Fanatec is delivered to their door, they will sell everything. or even simpler to cancel and refund them.
but what about people who don't have money to buy from competitors. such people will be screwed to the maximum, because when Fanatec returns the money to their accounts one day, the BF and Christmas promotions will pass or everything will be sold out and they won't be able to buy cheap anywhere.
and if Fanatec wants to keep its reputation, then they have to swallow this shit because they brought it on themselves and just let the goods go. and in this way get an army of satisfied clients on their side who will either give them by mistake or get a BF gift from Fanatec in the amount of 30-40% discount depending on the purchase of the bundle.
come on Fanatec, make a statement, inform all clients and make it public.

I think this will hurt them more than honoring their pricing error.
It sounds like they are canceling orders of the v2.5x regardless of whether there is a pricing error or not. Especially since the status has changed from "Pre Order Jan 29th" to "out of stock" on their website.
Fanatec benefits greatly from that BF, because it attracted a large number of new users as well as old ones, which all together generated record profits for Fanatec.
these are big numbers that reverberate through the financial markets. I believe that this is also due to the financial support of the German government, because Fanatec needs wider support in order to be able to finance the various large sponsorship projects it has.

if you have certain problems with the amount of v2.5x that were purchased for BF, then address that certain amount of customers with an explanation and let them choose what you offer them, and not that you yourself unilaterally decide what and how on our behalf.

- a big discount of 30-40% for the purchase of one of the available steering wheels (replacement for v2.5x)
- waiting for the steering wheel to be assembled at the factory (even if it takes until March-April)
- and/or only then cancellation and refund
It would be nice if you could chose to replace the v2.5x whit a v2.5 or even whit some wheel on the price range of 200€, probably if customer support answered you could try but other then that... not a lot we can do.
no, I wouldn't go for a steering wheel that costs €200 without any actions.

why couldn't you get it in exchange for the v2.5x, let's say I choose another available steering wheel on the store, in the range of 30-40% off, depending on its base price.
